Balsamic -Herbed Marinated Strawberries with Peppered Mascarpone and Crisp Bacon

8 oz. Mascarpone cheese
2 tsp. Coarsely ground black pepper
15 each Naturipe Farms Strawberries
1 tsp. Balsamic vinegar
1 tsp. Chopped basil
1 tsp. Chopped flat-leaf parsley
1. Bacon: Cut bacon (across shorter width) into thin strips, about 1/4 inch wide. Cook over medium heat, stirring occasionally until some fat renders and its deep-brown. Drain well, then transfer to absorbent paper to remove excess fat and cool.
2. Mascarpone cheese: With a spatula or paddle or mixing machine gently mix the cheese to incorporate the pepper evenly. Transfer mixture to pastry bag with straight tip (Ateco # 807 size). Keep refrigerated.
3. Strawberries: Trim of top of strawberries, cut in half lengthwise. Keep refrigerated.
4. Assembly: Gently toss berries with balsamic vinegar, basil and parsley. Arrange cut side up on tray. Pipe small amount (about 1/4 oz.) of cheese onto berry, garnish with bacon.

Slightly acidic aged balsamic envelops the strawberries sweetness, while the spicy peppered creamy mascarpone highlights the berry natural sweetness. The smoky crispy bacon adds that salty edge with a slight crunch and remember thinly sliced Prosciutto can be substituted, just begin with ¼ of olive oil to fry it in. Yield: 30 pieces1.
