Sweet Potato Casserole with Cranberries

Ingredients

2 1/2 lbs. fresh sweet potatoes
1 teaspoon orange extract
1 1/2 cups fresh Naturipe® Farms cranberries
3/4 cups walnuts, toasted
4 tablespoons brown sugar
2 tablespoons fresh orange zest

Directions

Preheat oven to 350 degrees and line a baking sheet with foil. Wash potatoes and puncture them several times with a fork. Spread out on the baking sheet and bake for 1 hour. Peel potatoes when they are cool enough to handle, then mash them up with the orange extract. Spread the potatoes into an 8 x 8 inch glass baking dish and set aside. To prepare the cranberry topping, lightly process cranberries and walnuts in a food processor, leaving various degrees of chunkiness. Stir in brown sugar and orange zest. Spoon this mixture over the potatoes and cook for 20 to 30 minutes at 350 degrees, or until the casserole is heated through.
