Oatmeal Cranberry Bars

These hearty breakfast bars are sure to get your morning started right.

Ingredients

Topping:
12 oz. fresh Naturipe© Farms cranberries, washed
1 cup apple juice
1 cup sugar
2 teaspoon crystallized ginger, minced

Base:
3/4 cup butter
3/4 cup flour
1/2 cup brown sugar, packed
1/4 teaspoon baking soda
1 1/2 cups rolled oats
1 cup chopped, toasted pecans
3/4 teaspoon cinnamon

Directions

Topping:
Heat juice and sugar in a pan until sugar dissolves. Add cranberries and cinnamon; cook until berries pop, about 5 minutes, set aside to cool.

Base:
With a fork, combine butter, flour, and sugar until mixed. Stir in baking soda, oats and pecans. Reserve 1 cup of this mixture.
Press remaining mixture into a 9x13 inch baking pan. Pour topping over oatmeal mixture.
Crumble reserved oatmeal over cranberry topping. Bake in preheated oven at 350 degrees for 35 minutes. Cool and cut into 12 bars.
